Chef Yva Santini’s Italian kitchen at Taverna Pazzo brings a new direction to Stratford’s main corner. Sustainable seafood like oysters, crab and lobster make up the heart of this season’s menu, and are joined by house made pastas and gnocchi, and locally-sourced meats and produce. Simplified flavours in the Italian tradition combine well with our diverse list of wines by the glass and bottle. Yva Santini, chef, Pazzo TavernaChef Santini is looking forward to her ninth season at Pazzo Taverna. In 2016 she will continue her exploration of the endless flavours of Italian cuisine. She strives to create authentically delicious food that satisfies and inspires, and to share the traditions of Italian cuisine while featuring the terroir of the local bounty. Raised in an Italian-Canadian family, Yva has always had a passion for cooking and an understanding of seasonality. Chef Santini was honoured to receive the Ontario Hostelry Institutes Top 30 under 30 award in 2014, and has led cooking demonstrations for Savour Stratford Culinary Festival and the GE Chef Series in Stratford and Toronto. Chef Santini is a member of Slow Food International, a graduate of the Stratford Chefs School and committed to feeding those who visit and live in Stratford a meal at the Pazzo table.
